As a food and beverage supervisor I am responsible for scheduling employees with an eye to daily business needs to maintain an appropriate labor cost. I order, receive and inventory the stock needed. I track daily sales figures, document employee performance, and ensure that the shop opens and closes at excellence by creating spread sheets, check lists and SOPs as needed. I also run the point of sale and serve as a line cook when needed. My main area of focus is the Smokehouse food truck and beer truck. I have spend a portion of my time working on the commissary prepping product for both restaurants and preparing the proteins for the entire park.

I was responsible for scheduling, ordering, inventory and daily sales reports. I was also required to take HR and leadership training classes. I was a safety trainer and participated in the osha general safety training class twice a year. I had to be flexible in my job and willing to work in a variety of food and beverage locations around the park. During the winter months I worked with the rides maintenance dept to help get the park ready to open for the season. My main area of focus was concessions and the production kitchen where we did most of the prep work for Dollywood.
